There are multiple reasons to it .
Firstly is that , in the video you were having a quite simple equation for understanding but in real life these equations become quite a lot complicated. Hence , doing there differentiation directly is not that easy .
Secondly, No model can be 100% sure on anything. Hence , we need to train our model so that it gets close it but actually at the top.
In this way it learns / understands the data, and hence perform in better way at the time of testing.
