your code is not even working for sample testcase. I am telling you why. Consider sample testcase

After sorting your array is [1,2,3,4,5] and target is 5. when you start loop with i=0 and j=4, you’ll find that ar[i]+ar[j] i.e ar[0]+ar[4] = 1+ 5 =6 which is greater than target . Now this satisfy second condition inside loop, Now your code do i–,j++ which makes i=-1 and j=5.
In next iteration your i become 0 again and j=4. So same stuff happened again and again and your code will stuck in infinite loop
