How can you so surely say that the relationship between the hours put into studying and the marks obtained would be linear? I get it that it must be a direct relationship but why does it necessarily have to be linear?

Yes you are absolutely right my friend there can be numerous factors affecting the relation between hours and marks ,it need not have to be linear at all ,it is just an example taken to explain us the concept of linear regression and how it works.
But as you said if we consider all the aspects of the problem (considering the real environment) it will never be linear,no relation is,noise occurs in each and everything.If that noise is too large that it affects the relation then linearity can not be considered but if noise is small then the relation can be taken as a linear one.
